My wife, Amy, made my Mom's sausage casserole recipe for dinner tonight. Mom has been gone since 1995 but her casserole lives on. Here is the recipe:
6 cups prepared Minute rice
2 rolls of ground pork sausage
1 small onion, chopped
5 stalks of celery, chopped
3 cans cream of mushroom soup
2 cans cream of celery soup
3-4 cups of shredded cheddar cheese
Prepare rice according to instructions on box and set aside. Brown sausage in a skillet and then remove from pan. Saute celery and onion in remaining sausage grease until cooked. Drain vegetables and mix all ingredients except for cheese and then spread in a casserole or pyrex pan. Top with grated cheese and cook about 30 minutes at 350F until cheese is bubbly.
